Khaman Dhokla recipe ingredients

For Batter:
1 cup Gram Flour (Besan/Chickpea Flour)
1 tablespoon Semolina (rava/sooji), optional
1 teaspoon crushed Green Chilli-Ginger (or paste)
1½ teaspoons Lemon juice
1/2 teaspoon Salt, or to taste
1 teaspoon Oil (for greasing)
1/4 cup Curd (plain yogurt)
1 teaspoon Eno Fruit Salt
3/4 cup Water
For Tempering:
1/2 teaspoon Mustard Seeds
1/2 teaspoon Cumin Seeds (optional)
10-15 Curry Leaves
2 tablespoons Oil
1/3 cup Water
1 teaspoon Sesame Seeds (til)
2 tablespoons grated Fresh Coconut
4 Green Chillies, slit lengthwise and cut into halves
2 tablespoons chopped Coriander Leaves
1 tablespoon Sugar

Khaman Dhokla recipe step by step with pictures

Step 1 : 
In a bowl, take 1 cup of chickpea flour (besan). Use a sieve to sift it finely. Then, add 1 teaspoon of baking soda to it. After that, add 1/2 teaspoon of sugar, 1 teaspoon of ginger-green chili paste, and 1/4 teaspoon of asafoetida (hing). Gradually add a little water to it, remembering to maintain the consistency of batter, and prepare the batter.

Step 2 : 
Now, for the dhoklas, take a steamer. Add 3 to 4 cups of water to it. Once the water is boiling, place the vessel with the chickpea flour batter in the steamer. Cover it with a lid and steam it for around 10-15 minutes. After steaming, insert a toothpick into the khaman dhokla. If it comes out clean, it means the dhokla is ready.

Step 3 : 
Now, in a khaman dhokla plate, apply a little oil. After that, place the prepared batter in the plate. Next, steam the batter in the plate for about 10-15 minutes or until a toothpick inserted comes out clean. Once done, remove it from the steamer.

Step 4 : 
Now, to prepare the tempering (vaghar) for dhokla, take a small pan. In it, add 2 tablespoons of oil and heat it. Once the oil is hot, add 1 teaspoon of mustard seeds (rai), 1/2 teaspoon of asafoetida (hing), 1 teaspoon of cumin seeds (jeera), 4-5 curry leaves (kadi patta), and 10-15 whole green chilies (march na katka). Also, add 1 teaspoon of sugar (khandsari)Then, add around 1/3 cup of water to it and let it simmer for a while. Please note that this is the tempering mixture that will be poured over the dhoklas later.

Step 5 : 
Then, the tempering mixture is poured over the dhoklas. This means that the tempering is spread evenly on top of the dhoklas. After that, sprinkle some fresh coriander leaves on top

Step 6 :
