How to Make Medu Vada Recipe Step by Step With Photos
Step 1 :
To begin making Mendu Vada recipe (garelu), first, wash around 250 grams of urad dal with three to four changes of water. After washing, soak it in approximately 800 ml of water for about six hours. Then, drain the water, and grind the soaked urad dal into a smooth batter, adding about 100 ml of water to achieve a thick consistency.

After that, let it rest for about four hours, meaning we will let it ferment with the help of a pinch of salt. During this time, we should completely remove all the water from it, and it is better if there is no water remaining at all.
Step 3 :
For medu vada recipe, After that, with the help of a mixer, we will grind the lentils. No water should be added during this process. The lentils should be ground to a fine paste without adding any water, and it’s important to grind them evenly.
Step 4 :
Afterwards, once all the lentils are ground, meaning they have been finely processed, transfer the mixture into a bowl. With a ladle, take the mixture and start beating it vigorously for about two minutes, so that it becomes light and fluffy. (Garelu)

Then, after about two minutes of beating, when the lentil mixture is no longer grainy but has a frothy consistency, heat a pan with about a tablespoon of oil. In that heated oil, add a tablespoon of mustard seeds, half a tablespoon of fenugreek seeds, and a teaspoon of asafoetida. Once the mustard seeds start spluttering, add seven chopped green chilies, two chopped green bell peppers, two chopped red bell peppers, grated ginger, and a bit of chopped cilantro from the top.
Step 6 :
After that, season it with a balanced amount of sweetness by adding sugar to your medu vada recipe (garelu). Mix everything well and let it blend together. Once mixed, meaning it has blended well, add about a tablespoon of oil from the top.

Then, to prepare the vadas, wet your hands slightly with water. Take a portion of the lentil mixture in your hand and form small, round balls. After that, create a hole in the center using your finger. By dipping the wet hand into the water, shape the vada without letting the mixture stick to your hand.
